Crème Brule ‘cakes’

I originally found the recipe on Pinterest but I had to modify it for it to work. It took several tries to master the cookie, but overall a delicious twist on an old favourite. These ‘cakes’ are not really cakes but a cookie sandwich. Great for a get together, or as a gift, they are absolutely delicious.


Makes 6


You will need:


For the filling:

½ of sugar

3 egg yolks

3 tbsp of corn starch

1 tsp of vanilla extract

1 ½ cups of milk

For the ‘cakes’:

½ cup of sugar

½ cup of butter

1 egg

3 ¼ cups of flour

For the sugar coating

1 cup of sugar


Instructions:

  1. Whisk together your egg yolks and ½ cup of sugar in a bowl mix until fully blended. (use leftover egg whites to make egg pancakes/ fry them)

  2. Then add your corn starch and vanilla extract to the mix. Mix until the batter is light yellow. Add milk and stir.

  3. Once fully combined, cover mix with plastic wrap and place in the microwave for 6 minutes. Stir the mix every minute.

  4. Cover mix again and let it chill for 2 hours

  5. In a separate bowl using your electric mixer, combine ½ cup of sugar and butter until it is light and fluffy. Add one egg and mix again until fully blended.

  6. Add your flour and mix until the batter oddly reminds you of popcorn/ batter in uniform.

  7. Massage the dough until it is one piece, wrap with plastic wrap and chill for 30 minutes

  8. Place dough onto wax paper and place another sheet of wax paper on top and flatten with your rolling pin.

  9. Cut out large circles with a cookie cutter or cup and reuse leftover dough to make the second layer of the cakes by first cutting the large circle and using a smaller cup or cookie cutter to make a whole. Bake at 350°F for 10 minutes.

  10. Once baked using the batter for the Crème Brule (the batter that was in the fridge for 2 hours) place it in a piping bag and cover the top half of the cookie without the hole and place the second cookie ( the one with the hole ) on top.

  11. Finally, in a pan, place your cup of sugar and let it melt. Once melted, carefully place in the center of the cookies. Let cakes cool and enjoy!
