Some may confuse these pancakes with the traditional crepe from France but these pancakes are light and fluffy compared to the crepes, which are somewhat chewy because of the more flour and fewer eggs in the recipe. These pancakes are great for any meal of the day as they can be eaten with sweet and savoury toppings.
Ingredients
For the pancakes:
3 eggs beaten well
3 cups of milk
3 Tbsp melted butter
1 ½ cups sifted flour
1 tsp salt
2 tsp sugar
Buttermilk syrup (optional):
½ cup butter
1 cup sugar
½ cup buttermilk
½ tsp baking powder
1 tsp vanilla extract

Beat the eggs with ¼ cup milk and slowly incorporate some/half of the flour with the sugar and salt. Mix well.

Add in with the rest of the milk and flour mixtures and the melted butter, mix until well combined. With a hot pan, lightly wipe some oil or butter. Once ready, pour a small amount of the pancake mix into the pan. Make sure to spread evenly. The pancake will be ready to flip once the edges of the cake are bubbled and brown. Once ready, serve and enjoy.

For buttermilk syrup, melt all ingredients in a pot until well combined. Can be served hot or cold with the pancakes
