Dominican Republic Rice Pudding Recipe

Arguably one of the most amazing, easiest, and somewhat time consuming rice pudding recipes I have done, this recipe takes me back to when I was younger. This recipe always took a long time to make but was always worth it (making the kitchen smell amazing!). The creaminess and sweetness is just right and adjustable. Good to eat hot or cold with a sprinkle of cinnamon this will become a family favourite!


Ingredients


4 cups evaporated milk

4 cups long grain white rice

1 bar butter

1 liter instant milk (1 liter water+9 tbsp powdered skim milk)

4 cups water

1lb white sugar

Peel of one lime

3 cinnamon sticks

Ground cinnamon

1 teaspoon of salt



Steps:

On high heat, boil the water and add in your butter, rice, salt, and instant milk. Stir frequently so the rice doesn’t stick. Leave to cook the rice (about half an hour or forty five minutes) if rice starts to show at the surface add in equal parts of milk to water.

After the rice has cooked, lower the heat and add in the evaporated milk, sugar, lime peel, and cinnamon sticks.

Stir frequently so the rice doesn’t stick to the pot. You should notice a change in the density of the mixture. Continue to cook for another 15-25 minutes until the pudding has thickened.

Remove the pot from the heat and leave to cool for a bit before serving. This recipe is best served with cinnamon, banana, raisins, and if you're feeling adventurous, toasted pecans.


Tips:


Remember to taste the food while you make it! It’s a quick snack but, it will always help the end result if any flavour is needed.


Stir constantly! The rice will get a little sticky so, don't leave the pudding unattended as it will affect the texture of the pudding.

  • The Dominican Republic is located in the Caribbean sea and the only neighboring country is Haiti. It’s national language is Spanish after being discovered by the spaniards back in 1492 and the capital is Santo Domingo.

  • The Dominican Republic’s flag consists of the colours red white and blue and in the center is a bible with a small cross above it. It is said that the bible is opened to the Gospel of John chapter 8 verse 32 which states “Y la verdad os hará libres” that translates to, “And the truth shall make you free”

  • The Dominican Republic is a presidential country, meaning that it’s ruled by a president instead of a prime minister because it is not under British rule. The current president is Danilo Medina who was elected in 2019 after an election scandal earlier that year.

  • Dominicans (the inhabitants of the country) are known for their loyalty to their family and friends. In a neighborhood, they treat everyone as if they were their extended family.

  • Dominicans are also known for not being punctual. Arriving late to a party or a reunion is normal for them.
